Quick Fix: Italian Egg-wich

We are all familiar with the egg sandwich because it's just so darn good. But I don't make egg sandwiches... I make Italian egg-wiches! Why? Because it's the Bossy Italian's Wife obligation to spread all things Italian, of course! That, and it's a great twist.

After you try this quick fix, I know that you will agree and that you will  never go back to your regular old egg sandwich again!!!


Have I discussed my cheese slicer before? I think I have. Look, slicing your cheese this way saves a ton of money and I can't recommend it enough! That and it makes you seem all self sufficient and such.

Okay, enough on the plugging of gadgets because that could literally go on all day. 


First, grab yourself a half of a bagel. Yes, just half, you don't need a whole bagel. I'm not one to go on about calories, so let's just say a half is filling enough. 
Toast it up, and cut it in half. 


Add one tablespoon of THE marinara sauce to each half of your bagel. If you don't have THE marinara sauce on hand, you can use whatever canned sauce you have--no judgments. 


Place your slice of cheese on one half. 
In this case, I have chosen the right half, but you can go left if you want. 


Place your sunny side up egg on the cheese.... 

One note about the sunny side up egg. I always make them sunny side up because I am an awful flipper of eggs. They are just too delicate and I inevitably lose it on the flip. So I chose not to flip. I abstain. Hence, sunny side up. 


Top with your saucy other half.... 
Take a moment to joke about your significant other is your saucy other half. K... got that outta your system? Me too. 


And press down! AHHHHH! YUMMINESS! 
And all of that in 10 minutes. 

Time: 10 minutes | Serves 1 | Level: Easy 

You Will Need: 

1 egg
1 tablespoon butter 
2 tablespoons sauce 
1 slice mozzarella cheese 
1/2 bagel cut in half 

Method

Toast your bagel half and then slice it in half. (Bagels don't actually fit in my toaster, so I have to use the oven on a LO Broil for about 5 minutes. Eh, it happens).

Melt your butter in a small skillet over medium high heat. Crack your egg in the skillet and let it cook, just like that until the whites are cooked through.

In the meantime, spoon half the sauce on each side of the bagel. Top one side with cheese.

Place your cooked egg on top of the cheesed half.

Put the two halves together and then press down to make the yolk and runny and yum yum!
