Spinach & Strawberry Salad

Seasonal cooking is healthy cooking. Now, I am not going to act like I have some little healthy soap box to jump onto or anything like that because just a  quick glance through my blog will tell you otherwise. The truth is, being Italian-American, I eat a lot of less than healthy meals. So I have to temper that with the more healthy items.

Healthy can taste great, too. So while I may not be the healthiest cook in the world, I appreciate a great salad as much as a good plate of pasta. And that is the truth. This salad is yumm-licious. Believe that! And the strawberries and spinach were both grown and purchased locally! Holla!


Mmmmm.... strawberries. I am in love. They are neither too sweet nor too tart. They are juuuust right! 


A short word about fresh spinach: this is no store-bought stuff. You gotta wash it. And wash it WELL! Take extra time because nothing is worse than dirty spinach. 


I tear it gently with my hands into bite-sized pieces. 


Top with sliced strawberries, crumbly cheese ( I used ricotta salata, my fav!), and some onions. 


The dressing is entirely up to you. My husband used Kraft Italian. Me? I topped mine with a drizzle each of chili pepper infused olive oil and balsamic vinegar! 


Oh yes! This was the perfect seasonal salad to satisfy my appetite! 

Spinach & Strawberry Salad 

Time: 15 minutes, tops | Serves 2 | Difficulty: Easy 

You Will Need:

Fresh spinach from your local produce stand 
8 fresh strawberries, sliced
1/4 of an onion, sliced thin 
crumbly cheese, (ricotta salata, feta, blue, etc) 

Optional for dressing: 
Drizzle of Olive oil
Drizzle of Balsamic vinegar 

Method:

Be sure to wash your spinach extra well to get off all the dirt. 

Tear spinach into bite sized pieces, and place into two bowls. 

Top with four strawberries each, then onion and then cheese. 

Drizzle with olive oil and balsamic, or top with a dressing of your choice.
