Quick Fix: Berries & Cream

Berries of all sorts are coming into season! This is cause for celebration if you ask me... but desserts, let's face it, can be time consuming. Sometimes you just want something fast. When I am in that kind of mood, I find that this recipe really hits the spot!

Berries and cream takes about 10 minutes and you can even make it ahead of time, making this quick fix a sure-fire way to satisfy your sweet tooth while saving you enough time to be able to paint your toenails... or read a magazine...or call your auntie in Mexico. You know, whatever you didn't have time for before.

Also, there is a great little serving suggestion that makes this dessert extra pretty and impressive looking!


The ingredients for this recipe are super simple. Vanilla, two teaspoons of sugar, heavy whipping cream... 


AND BERRIES! 
This is totally up to you. You can use any variety, that is. I chose some strawberries and raspberries. I put the strawberries in the bottom of two mason jars. I will layer the whipped cream on top and then the raspberries on top. It's gonna look purdy! 


Put your cream, sugar, and vanilla in the mixer, or in a bowl if you are using a hand-held. Either way will work. If you have neither of those and want to do it by hand, feel more than welcome. It'll just take longer. 


I used level 8 to whip it, which is pretty high. So whip it good. 


Took about two minutes! And look at that thick creamy whipped cream! 


Put your whipped cream in the mason jars. Tap the jars on the counter to make the cream go down into the berries.... 




And top with raspberries!

Berries and Cream

Time: 10 minutes prep, 5 minutes cook | Serves 2 | Difficulty: Easy

You Will Need: 

1 cup heavy whipping cream 
2 teaspoons sugar
1 teaspoon vanilla 
Berries (your choice) 
2 mason jars 

Method: 

To get the best whipped cream EVER, the first thing you need to do is put your bowl and whisk in the freezer for 10 minutes. This is the secret to whipped cream, I swear. 

While that is happening, wash your berries and place some in the bottom of the mason jars. set the others aside. 

Measure out your cream, vanilla, and sugar. This is because you want to take your bowl and whisk out at the VERY last minute. 

When you are ready, take out the mixing bowl and whisk from the freezer. Place your cream, vanilla, and sugar in the mixer. Mix on level 8 (or high) for 1-2 minutes or until soft, white peaks form. 

Place your whipped cream in your mason jars. Try not to eat it all.. this was hard for me. 

To get as much whipped cream as humanly possible into the jars, tap them on the counter top lightly. 

Top with more berries. Refrigerate until you are ready to serve!
