From The Canning Vault: Tomatoes & Tomato Juice

Remember waaaay back a few weeks ago when I showed you my canning vault? If not, you can click here to see it and marvel at my bounty. If you do remember then you will also recall that I had 51 cans of tomatoes in my pantry. And since then, I actually canned more tomatoes. This was all in an effort to not buy canned tomatoes this entire calendar year. Keep your fingers crossed for me that it works!

Needless to say, though I will say it anyway, I have a ton of tomatoes. This means I will probably show you what I do with them more than once. But in the name of not killing you faithful blog readers with too many tomato posts, I am combining a couple of these. Because tomatoes are just SO useful.

Tomato Sauce! 


I know you can't be all that surprised that I am getting right to the business of making tomato sauce. Because I am Italian American. And because I love tomato sauce. 
It should also be noted that just when I think I have completely given up canned goods, tomato paste! UGH! I am not resolved to not buy that in a can, either, which will be a challenge, but not impossible. 


I put the tomatoes and the juice in my food processor together. YUM! 


And into the pot! With some fresh oregano, basil and parsley. YUM. Cooked it all down for several hours and I used it to make lasagna. Now I know I haven't yet put out my lasagna recipe, and I want you all there in cyber space to know: it is on it's way. I have been spending the last year--yes, you read that right, YEAR--perfecting it. 

Beef Stew


Tomato juice is the perfect thing to make a great beef stew. As soon as the weather is cold, I get a hankering for a nice, hearty stew. Also in my stew? A pint of tomatoes with their juice. Boy oh boy the flavor was abounding in this stew!

    know a few of the pictures aren't loading correctly.
    I'm not sure why but I think its a linking issue.
