Flourless Pumpkin Bread Recipe

Ever since I made those banana muffins, I became obsessed with replacing oats for flour in recipes. Only now I wanted to make a bread. Well, really I wanted to make more of those muffins, but my husband has this slight issue with eating things that are too similar too much... so I thought, well, I'll just turn it into a bread. He'll never know.

Which he didn't.

What I also wanted to do was to replace the banana with pumpkin. Tis the season, after all. Also, these flourless breads and muffins are really moist and I just love that about them... that is always my issue with breads. It's like, "can I get a little moisture in this bread please?!" These recipes fulfill that burning desire within me.


We have pretty much teh same ingredients we did for those banana muffins, only we've subtracted the bananas, added pumpkin and also a little pumpkin pie spice for good measure! 


Grease a square pan well with butter.... and set aside. 


Just like before, we are going to use a blender. Now, I will say that I sort of wished that I had used my food processor for this one because the blender is slender... and not as big as my food processor. But I used my blender, and so can you. 


2 cups of oatmeal are going into this recipe. 


By the time I added my applesauce to the blender, I knew I was in trouble... and I wasn't sure how all the stuff would fit. However, I ignored this and soldiered on. 


And I added my brown sugar. 

By this time, I knew there was absolutely no chance of squeezing another thing into this blender. So I gave up and decided to get to blending. 


Can we just take a moment to appreciate this color palette together? 
Looking at the colors here, I have a fantasy, and I would like to share it with you. My fantasy is that Project Runway decides to do a challenge where the designers have to use some of our most beloved recipes to create outfits. It might not necessarily be this recipe, but maybe pumpkin pie or something and this would be the color palette. 

Wouldn't that be an awesome episode of Project Runway? I don't think I have ever seen it done, and there is certainly an argument for why it should be. 


While I was daydreaming about Project Runway, I also blended this stuff in the blender a little, which freed up some much-needed space. I had to stir the stuff in the blender continuously, though, because I overloaded it. Ah, well. You can't win them all. 


Anyway I added my baking powder and soda and pumpkin pie spice... 


Also my vanilla extract... 


And my eggs. 


And after some tireless alternations between stirring and blending: a bread batter was born! 


I poured it into my prepared pan... 


And I took another moment to fantasize about Project Runway. And how perfectly pressed Heidi Klum always looks... and also a moment to wonder about why they replaced Molly Sims on All Stars this season. And then I remembered that I thought Molly Sims was just too nice on the first season, and also that I didn't like the way she said good bye to people who were "out." 

Then I put my bread in the oven on 400 degrees for about 45 minutes and.... 


YES and YUM! 


The flourless bread gods smiled unto me and behold: a great flourless pumpkin bread! 

Flourless Pumpkin Bread 

Time: 1 hour | Serves: 6-8 | Difficulty: Easy 

You Will Need: 

1 cup brown sugar
2 eggs
2 cups old fashioned rolled oats
1 cup applesauce
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
15 ounces pure pumpkin
1 teaspoon pumpkin pie spice
1 teaspoon vanilla extract 
butter, for greasing pan 

Method:

Preheat your oven to 400 degrees. 

Grease a square baking pan with the butter and set aside. (I used an 8 inch pan) 

In your blender or food processor (whichever one is bigger) place all the ingredients. Blend until the oats have combined fully. If you need to, stir in the blending device and re-blend until you get the desired consistency. 

Pour batter into the prepared pan. 

Bake for 45-50 minutes in the oven. Allow to cool, slice and a serve!!!

  1. I have to say, half the reason I tried this recipe wasn't for just the recipe but the fact that as I read through it I laughed aloud numerous times!

    Thank you for the great recipe and for the smiles you have given to me this day! I have also come to the realization that my blender is a piece of crap and I MUST get a new one...maybe a Ninja! (When the commercial asks "Do you want to chop like a Ninja?" I always answer it (aloud) with a resounding "YES!" Ohhhh, to make snow with my blender...that would be the live! ^_^
