From The Canning Vault: Pickled Peppers

You are totally going to laugh when I tell you this, which is the intended thing, but seriously, you can't make this stuff up. As you know, this year we have canned a ton of fruits and veggies. Whatever our farmer gave us, we canned. Our farmer's name is Paul Parsons--real nice guy and willing to give us a ton of great produce.

So he gave us some peppers. And we pickled them. We made Paul Parson's Pickled Peppers. Hehe. I love saying that. Typing that is even better. I hope you enjoy it as much I do. Anyway, at first I was like, "what in the world am I going to do with all these pickled peppers?" I mostly felt this way because  pickled peppers aren't an item I generally purchase at the store.

This particular batch of pickled peppers are banana peppers. I also have some pickled bell peppers, but I haven't broken them out just yet.

I needn't have worried. I have just opened my first jar and I have found lots of uses for them!

This particular day, I stuck them on a salad....

On a sandwich (or ten!) 
On pizza--yes, this was pretty awesome. And I would like to add that it was a meatball pizza with these peppers and onions.
