Birthday Banoffee

When I went to Scotland to visit my sister-in-law, we went to the grocery one night on a mission: banoffee. Of course, I had no idea what the heck that was, and of course, my sister-in-law, Laura, being all assimilated into Scottish culture and all, said, "WHAT?! You don't know what banoffee is?" No freak, I didn't.

Good thing my freaky-deaky banoffee loving sister-in-law introduced me to it, though, because this stuff is DA BOMB! It's basically a pie-like, banana-y custard whipped dream. Yep, I think that covers it. While I was in Scotland, she also announced that what she wanted to eat for her 30th birthday was banoffee. ALL she wanted was banoffee. I shrugged and said, "I can probably do that. "

And then I forgot about it. That is, I did until my favorite food magazine, Saveur, just happened to put out a recipe for it! That was when the memory of that sweet tasting banoffee came back to me all at once like a vision filled with sugar and toffee. And bananas. And two sticks of butter [per pie!]

So I made it for her birthday, which, incidentally is today!!! It's Laura's big 3-0, AND it's also her twin sister, Sarah's birthday, so I have to give both twins a big twinny birthday shout out Bossy Italian Wife style!

HAPPY BIRTHDAY SARAH AND LAURA! 

You're 30 now, which means that you can eat a pie with a crazy name like banoffee. If you, too, want to party like it's your birthday with some banoffee, I totally recommend it. No one should live without having tried banoffee...it would be an incomplete life!

Butter + Digestives = some banging decadent crust! 


Then MORE BUTTER, sugar, and condensed milk makes a terrific toffee for this banoffee. 


Then top with bananas, whipped cream and shaved chocolate!!!! 


Throw a few candles on that sucker, and you've got a birthday banoffee fit for the queen!
